Tomatillo-Avocado Salsa with Jalapeño Peppers

Yield: 3 cups



  1. Pulse tomatillos, jalapeño, cucumber and cilantro in a blender until smooth but not puréed.
  2. Whisk together oil, lime juice and garlic to make the dressing.
  3. Add dressing to the tomatillo mixture and stir in avocado and tomato. Salt to taste.
  4. Garnish with lime slices before serving.
